MARINATED EGG “AJITSUKE TAMAGO”

An essential element that will perfectly accompany your bowl of soy ramen or Tonkotsu-style ramen and its sliced meat (chicken or pork), Ajitsuke tamago marinated eggs will add all the deliciousness to this typically Japanese dish.
1. Bring the water to a boil. Reduce the heat and slowly add the cold eggs, fresh from the refrigerator. Boil for 6'30 minutes so that the eggs are "half-cooked". At the start of cooking, turn the egg from time to time so that the yolk is in the middle.
2. Fill a bowl with cold water and add ice if you have it. Once boiling, transfer eggs to a bowl. When the eggs have cooled, peel them.
3. Place the eggs in the dish containing your pork and the marinade in which it was cooked. Turn the eggs from time to time so that they absorb the sauce well. The eggs should be left to marinate for 1 day.
