UDON INANIWA NOODLE COOKING

Japanese Udon noodles whose manufacturing faithfully perpetuates the tradition of Inaniwa Udon, a know-how of more than 350 years. During their production, the noodles are cut only with a knife to a certain length while the kneading, maturing, rolling, crushing and stretching are all done by hand.
1. Put 1 teaspoon of baking soda in 1 liter of water and bring to the boil. Boil water in advance in another pot so that the washed udon noodles are reheated.
2. Boil the udon noodles for 2 minutes. Be aware that due to the presence of baking soda, the risk of splashing is higher than usual.
3. When the noodles have finished boiling, drain them in a colander and rinse them several times to remove the mucus. Then place the udon noodles in boiling water to heat them quickly and drain them in a colander. They are ready to be added to your dishes.
