The noble sweetness of lusciously ripe mangoes, with their fresh and subtle flavors, is justly matched with a superior grade Taiwanese Oolong. An aromatic and refreshing blend that is extremely soft on the palate. 

This oolong if a high quality Wenshan Bao Zhong type with twisted leaves characteristic of oolong shaped in the craft way. Both at nose and at mouth, you can enjoy a generous sweet mango almost milky that dominate the bouquet and is accompanied with pineapple notes and orange flowers. The oolong tea adds some floral notes, particularly during the second infusion of leaves. It will also please the iced tea lovers.

TEA JELLY - OOLONG MANGO

This jelly is made from our oolong tea flavored with mango. Enjoy the fruity flavors of juicy mango and its great freshness. Would you like a dessert?

Recommended teas: SUPERIOR OOLONG MANGO, PARADISE FLOWERS

Ingredients (for 4 persons):
For the jelly: Recommended tea 8g, Boiling water 400ml, Gelatin powder 5g, Sugar 2cas
For the lemon syrup: Sugar 1 tsp, Water 1 tsp, Lemon juice a half case (7.5ml)


Preparation:

  1. In a teapot, infuse 8g of tea in 400ml of boiling water for 3 and a half minutes.
  2. Remove the leaves and add the sugar and powdered gelatin while the tea is still hot. When the sugar and gelatin are diluted, transfer to a decanter and chill in the refrigerator.
  3. Prepare the lemon syrup by mixing the sugar, water and lemon juice in a microwave-safe container. Heat for 30 seconds.
  4. When the jelly has set in the refrigerator, add a little lemon syrup before serving for even more freshness!

What is Oolong tea or blue-green tea?

Oolong tea is a semi-oxidized tea. Unlike green tea (unoxidized) and black tea (fully oxidized), Oolong leaves undergo partial oxidation ranging from 10% to 70%. It all begins with the stirring of freshly harvested leaves in bamboo baskets. This step, which can last several hours, determines the oxidation level and the final aromatic profile. There are generally two main categories:

  • Lightly oxidized Oolongs: Similar to green tea, they reveal floral notes (lily of the valley, jasmine) and a smooth texture.
  • Highly oxidized or roasted Oolongs: These offer more complex aromas of honey, ripe fruit, hazelnut, or precious wood.
  • The secret of oxidation: Depending on the producer's expertise, oxidation varies from 10% to 70%.
  • The aromatic profile: Lightly oxidized Oolongs reveal floral notes of lily of the valley or jasmine, while the most oxidized or roasted ones release aromas of honey, ripe fruit, or hazelnut.

The Art of Infusion: The Gaiwan and Gong Fu Cha

To enhance a fine Taiwanese tea, the traditional Gong Fu Cha method is ideal. It uses a gaiwan (or zhong), a covered bowl of Chinese origin.

Why use a gaiwan?
