MEAT WITH SOY AND SAKE SAUCE
PREPARATION: 30 MIN. FOR 2 PEOPLE
An essential element that will go wonderfully with your bowl of soy ramen or Tonkotsu-style ramen, the meat (chicken or pork) cut into slices should be placed directly in the broth. The whole thing will then be completed by the addition of an Ajitsuke tamago marinated egg and vegetables of your choice.
INGREDIENTS NEEDED:
100ml OZEKI YAMADANISHIKI sake, 80ml soy sauce, 250ml water, 2 tablespoons sesame oil, 400g roast pork in the loin without bone, leek, 1 tablespoon grated ginger, 30g cane sugar.
1. Heat 2 tablespoons of sesame oil over medium heat in a sauté pan or frying pan.
2. Place the meat and grill all the exterior parts.
3. Pour 100ml of soy sauce over the meat.
4. Pour 250ml of water and 100ml of sake over the meat.
5. Add the green part of the leek cut into bundles.
6. Add 1 tablespoon of grated ginger.
7. Add 30g of cane sugar.
8. Cover and bring the heat to a high temperature. When the pressure increases, simmer over medium heat for about 15 minutes. When the pressure has subsided, open the lid.
9. Then transfer to a suitable dish and leave to rest in the refrigerator overnight so that all the flavors permeate the meat well. Turn the meat from time to time to allow the sauce to absorb better.
