- Temperature: Use water between 75°C and 80°C. Water that is too hot will burn the leaves and mask the sweetness, resulting in astringency.
- Brewing Time: Pay close attention, the brewing process is quick. 45 seconds to 1 minute is sufficient for the first infusion.
- The Technique: If you are using a Japanese teapot (Kyusu), pour until the very last drop: this is where the richest flavor (Umami) is concentrated.
- Multiple Infusions: Don't throw away your leaves! This quality tea can be brewed 2 to 3 times in succession. For subsequent infusions, slightly increase the temperature and reduce the steeping time to just a few seconds.
