BISCUIT GOURMAND

Black tea | India

TASTING NOTE

Biscuit Gourmand: A comforting and intense sweetness

Biscuit Gourmand tea is an invitation to pure indulgence. Designed to evoke the comforting aroma of freshly baked biscuits, this blend is based on black teas selected for their ability to carry rich and sweet aromas. Whether you enjoy it neat for its captivating fragrance or prepare it as a smooth latte, this CTC (Crush, Tea, Curl) tea ball guarantees a rich and comforting experience.

CTC Black Tea (Tea Balls)

The unique visual and flavor profile of this blend lies in the use of black teas processed using the CTC (Crush, Tear, Curl) method:

  • Appearance: The tea leaves are not whole, but delicately shaped into small, uniform balls. This "Crush, Tear, Curl" process concentrates the tea's juices at the heart of each ball.
  • Intensity: Thanks to this shape, the surface area in contact with the water is maximized. The tea releases its tannins and color almost instantly, resulting in a very dark and full-bodied brew.
  • The ideal base: The robustness of CTC tea provides the perfect foundation for indulgent aromas. Where a delicate tea would be overwhelmed by the biscuit scent, the tea balls respond with a malty strength that creates a perfect balance between the tea and the sweetness.

Aromatic Profile

From the moment it's brewed, this blend unfolds a range of comforting flavors:

  • The Nose: A dominant fragrance of buttery biscuit, caramel, and a hint of vanilla fills the room.
  • The Palate: A bold and generous attack. The strength of the CTC black tea provides a solid base, while the pastry notes soften the overall impression, creating a sensation of "liquid biscuit."
  • The Finish: Round and lingering, leaving a sweet and malty aftertaste.

Why choose Biscuit Gourmand tea?

Absolute indulgence: For anyone who loves teas that evoke the comforting aromas of childhood kitchens.

  • Fast brewing: Thanks to the CTC method, your tea is ready and intensely flavorful in no time.
  • Perfect as a tea latte: If you love milk tea, this is an essential addition to your collection.
  • Iconic packaging: Available loose leaf or in our famous illustrated metal tins, perfect for gifting or keeping the leaves fresh.

Preparation tips

Because of its CTC bead base, Biscuit Gourmand is ideal for milk-based preparations:

  • Temperature: Use hot, spring, or filtered water between 85°C and 95°C.
  • Infusion time: Be careful, the brewing process is quick! 2 to 2"30 minutes is all it takes.
  • Dosage: Use approximately 2,5g to 3g of tea (one heaped teaspoon) per 150ml of water.
  • The "Royal Milk Tea" Experience: For pure indulgence, brew this tea directly into hot milk (or with a generous splash of milk). Its CTC structure remains stable even with milk, creating a smooth and creamy beverage reminiscent of the finest Japanese tea rooms

  • The CTC (Crush, Tear, Curl) Method

The CTC method, an acronym for Crush, Tear, and Curl, represents an industrial revolution in the world of black tea.

    Origin and History

    • Invention: It was developed in the 1930s by Sir William McKercher in Assam, India.
    • Expansion: The process became widespread in the 1950s, particularly in India and Africa, to meet a growing need for productivity and standardization.
    • Current Use: Today, the majority of black teas produced worldwide use this method.

    The Manufacturing Process

Unlike the "Orthodox" process, which preserves the integrity of the leaf, CTC is a rapid mechanical process:

    • Crushing and Shredding: After light withering, the leaves pass between metal cylinders equipped with serrated blades that crush and shred them.
    • Rolling (Curling): The pieces are then rolled in a rotating drum (Ghoogi) to form small, hard, and uniform balls.
    • Accelerated Oxidation: Breaking down the leaf cells significantly accelerates oxidation, resulting in major time savings in production.

    Characteristics and Flavor Profile

    • Intensity: CTC tea produces a very dark, intensely flavored, and full-bodied brew.
    • Fast Infusion: The bead shape increases the surface area, allowing for near-instant infusion (ideal for tea bags).
    • Consistency: This method guarantees consistent flavor from batch to batch.
    • Ideal Use: It's the perfect base for breakfast teas (English Breakfast) or traditional recipes like Masala Chai, as its strength stands up perfectly to the addition of milk and spices.

  • The CTC Expertise: The Art of Intensity

At Lupicia, we choose the CTC (Crush, Tear, Curl) method for our most indulgent creations. This unique process shapes the tea into small, dense beads that instantly release the full power of black tea.

Why does the CTC method make this tea irresistible?

Our Biscuit Gourmand blend is so popular thanks to its black tea base, processed using the CTC (Crush, Tear, Curl) method. Unlike whole leaves, this tea comes in the form of small, dense pearls. Here's why this is a major advantage for your tea tasting:

    • An instant explosion of flavor: Thanks to its pearl shape, the surface area in contact with water is maximized. In just 2 minutes, you get a dark and intense brew that immediately releases its notes of warm biscuit and caramel.
    • The perfect base for indulgence: An aroma as rich as biscuit needs a tea that can stand up to it. The robustness of CTC tea provides a malty and full-bodied structure that perfectly balances the sweetness, without ever being overpowered.
    • The champion of the "Tea Latte": Do you like your tea with a splash of milk? The CTC method is for you. Its natural strength allows it to retain all its character, even when mixed with milk or cream, creating a smooth drink reminiscent of the finest pastries.

Don't let its small size fool you! These tea pearls are packed with flavor. For a truly memorable afternoon treat, prepare it as a 'Royal Milk Tea' (brewed directly into hot milk): the CTC method will reveal a velvety texture you won't find with any other tea.

In short: Choosing Biscuit Gourmand tea in its CTC version guarantees a rich, quick-to-brew, and incredibly comforting cup.
